Meet Dave Amos, Ferryhill House Hotel’s new Head Chef

When I was growing up in Peterculter, I spent a lot of time down by the river and roaming in the woods as a child. My love of nature is reflected in my hobbies.

I love camping with family and growing my own produce in our garden. I even have six rescued battery hens which provide fresh eggs daily. I love to spend time foraging in the wild too and smoking, curing, and preserving my harvest. Art is my other hobby. For me, cooking involves the same sort of creativity. 

Like many chefs, my interest in food began in the kitchen with my mother and grandmother. My Grandparents lived in Orkney and for a time I worked at the Standing Stones Hotel there.

Ferryhill House Hotel always had a good reputation for food and as I live locally, I always thought it would fill me and my family with pride if I could say, ‘I work there’. I wanted to work somewhere that would allow me to utilise my skills using fresh, locally sourced produce and McGinty’s Group is perfect for that.

I love big bold flavours, fresh and fragrant. From Mexican cuisine to campfire cooking and big hearty family feasts, I like looking at global dishes and putting a Scottish twist on them.

My daughter has some allergies so I’m always experimenting with dishes that cater for different dietary requirements. I enjoy unusual combinations and trying new ideas. Something that makes our guests say, ‘I’ve not tried that before, but I really want to!’ For example, my new favourite dish is Prosciutto Wrapped Monkfish  with Cannellini bean salsa, potato gratin & lemon oil.’
