AJ’s Knockout is a clarified milk punch. When pineapple and milk are mixed together, the enzyme bromelain, found in pineapples, separates the casein proteins in milk, and after filtration leaves a silky smooth textured, yet completely translucent drink. The addition of raspberrites creates a drink that is reminiscent of raspberry ripple ice cream.
