As a previous Development Chef for Baxters, I love soup, be it broth, chowder or good old tattie soup. Soup is foolproof, quick and always comforting.

Be adventurous with your vegetable combinations and pulses, add a rich stock and slowly cook. We make our own stock, but there are good quality products available.

Soup is the answer when you have some tired veg at the end of the week. Keep it chunky or use your stick blender for a smoother texture. Try butternut squash with some coconut milk and a hint of chilli, or try cream of cauliflower with cumin seeds. Adding fresh herbs, meats, fried onions, garlic croutons or cream can take your soup to a new level.

You can even add more stock to a leftover stew and extra vegetables to make a stoup!
